#23, PC Chicken soup- #8



The last new recipe of 2017 and the 8th new PC recipe we tried was Chicken Soup!
We were going to go to Mom's so I called and Bennie says- "Oh your mom is just cutting up the vegetables for the chicken soup you are going to show her how to make in the pressure cooker"   Then I hear mom yell- "I didn't ask her yet!"  HAHAHAHAHA

I have already made this again.

Ingredients

  • 3- to 4-pounds of bone in chicken breast
  • 2 ribs celery, in big chunks so I can pick it out- 
  • A ton of carrots  -or- 3 medium carrots, peeled and sliced
  • Some green onion sliced
  • salt, pepper, onion and garlic powder
  • 2 quarts chicken stock

1 Put the chicken in the pot of a pressure cooker, breast side up.

2 Layer all of the other ingredients into the pot, pouring in the broth last. Add the seasonings next.

3 Place the lid on the pressure cooker and make sure it is sealed. Select the “Manual” program, then set the time to 25 minutes at high pressure or if available you can also select the "Soup" program and follow the same cooking time. 

It will take 20-30 minutes for your pressure cooker to come up to pressure, and then the actual cooking will begin. Plan on about 1 hour from start to finish. When the soup has finished cooking, you might want to let it release naturally- at least for the first 10-20 minutes.

Prepare the chicken meat: Be careful when removing the chicken from the pot, and transfer it to a dish for shredding and fishing out the bones. After the chicken is shredded you can add back to the soup or save it for a new meal.
