I love my new shawl. LOVE. IT. I think I need more of this color....I love this yarn too- its a pleasure to work with and block out so well- it has a nice drape...I need more in lots of colors haha

Pasta alla carbonara, with recipe

Pasta alla Carbonara, The Chew


We were watching Cutthroat Kitchen on Food Network 2 weekends ago and the dish was Pasta Carbonara. We got into a discussion about it and since I had all of the ingredients  I made it the following week. I always wanted to make it but the egg part weirds me out. It turned out ok and we all lived to tell so it must have been cooked through enough. 





ingredients

SPAGHETTI CARBONARA

  • 1 pound Spaghetti
  • Extra-Virgin Olive Oil
  • 1/2 pound Thick Sliced Bacon; diced
  • Garlic Cloves; thinly sliced
  • Eggs; room temperature
  • 1 cup Freshly Grated Parmesan Cheese; plus more to garnish
  • Salt
  • Freshly Cracked Black Pepper
step-by-step directions
  • Bring a large pot of Salted Water to a boil.
  • Heat a large skillet over medium-low with a few tablespoons of Olive Oil. Add the Bacon and cook, stirring occasionally, until Bacon is crisp.
  • Add the Spaghetti to the boiling water and cook 1 minute short of the package instructions. Drain, reserving a cup of pasta water.
  • In a medium bowl, whisk together the Eggs and Cheese with a generous amount of Freshly Cracked Black Pepper. Loosen with a small amount of pasta water.
  • When the Pasta has 1 minute left to cook add the Garlic to the rendered Bacon and cook until fragrant. Add the pasta to the skillet and toss to coat.
  • Remove from heat and stir in the egg mixture until creamy. Add a small amount of reserved pasta water if pan is too dry.
  • Garnish with more Parmesan to serve.

I made this originally May 2013. I saw it in my recipe pile and thought it was time to make it again...I should have looked at that May 2013 post before I made this. Hubby looked at me like I had 3 heads when I said I made this before- I knew I made it- I had the printed recipe in the "Made" cookbook...but didn't remember him not eating it. Q missed out on this twice already too. This was more of a garlic pasta this time- I didn't add pasta sauce. Didn't even occur to me to do so.

I made this for the first time last year and we enjoyed it. See the post HERE. This is easy and not a lot of ingredients are involved. It will feed a crowd! Maybe that's why they call it picnic chicken...because I feel like this isn't really picnic food.

Spicy Hot Chicken Soup


I have been wanting to try this recipe for a long time now. I found it in Penzey's Catalog well over a year ago. Spicy isn't normally my thing, but I couldn't resist. I modified it...of course. As Mrs George would say- I used the recipe as inspiration...haha. Q ate this up like it was his job. Which is good because he had been under the weather and he is not normally a soup eater unless Ramen is in the name. I also enjoyed it- I couldn't eat a TON like I wanted to because of the Cayenne.

If you google the recipe title you will find many recipes out there for this, with a few variations. The main ingredients are the same...all 4 of them. YEP only 4 ingredients!

Hand Sanitizer Cozys

Next on the "New items to try list" were a few hand sanitizer cozy's. I only made 4 and all 4 went!
The pink one just below was my favorite. The blue/yellow one I accidentally made larger, to fit a 2 oz bottle. The other 3 fit the 1 oz bottles. These are always pretty quick to make, except the button part- but after the first 2, sewing the buttons on the last 2 went quick.
