Easter 2020 on lockdown


I pulled out the slow cooker for the Ham and THIS happens. The base came off of the bottom! It didn't give any resistance when I took it out so I am not sure what happened. 



Next we pull out the Instant Pot 

Mom and Ben brought over her crock pot but we ended up using my broken one and we lived to tell the tale so all is well. Though it is now in the landfill.

Ingredients
2 cups all-purpose flour
1 envelope rapid rise yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
4 tablespoons butter

Directions
In a large mixing bowl, combine 3/4 cup flour, yeast, sugar and salt and set aside. In a microwave safe bowl, combine milk, water and 2 tablespoons butter and microwave until very warm, between 120 degrees and 130 degrees. In stand mixer with paddle attachment, beat in flour mixture at medium speed for 2 minutes, scraping down sides as needed.
Add 1/4 cup flour and beat for another 2 minutes at high speed. Stir in remaining flour {add additional flour if dough is sticky and not soft}. Pour onto a lightly floured surface and knead until smooth for about 10 minutes {or use paddle attachment to do this in the bowl}. Cover and let sit for 10 minutes.
Shape dough into 12 equal balls. Place dough balls in a greased 8-inch round pan. Cover and let rise in warm area until dough is doubled in size {about 30 minutes}.
Bake at 375F for 20 minutes or until tops are golden. Place on a cooling rack, brush with remaining melted butter. Enjoy!
