New Recipe #25, IP Meatloaf 8/20/18, New Pressure cooker recipe #5

Ingredients:

Potatoes
1.5 lbs. Pre-washed small potatoes- or cup up regular ones
1 cup-ish chicken broth
2 tsp. minced garlic
4 tbsp. salted butter, sliced
1/2 cup shredded Parmesan cheese
Meatloaf
1 pound ground beef, 1 lb meatloaf mix= 2 lbs
3/4 cup milk
1 egg
3 slices of bread, cut up into small pieces
1 tablespoon Worcestershire sauce
½ tablespoon onion powder
½ teaspoon salt
½ teaspoon dry ground mustard
¼ teaspoon black pepper
⅛ teaspoon garlic powder
Glaze
½ cup ketchup
1 tbsp. balsamic vinegar
Spray the pot with nonstick spray, add potatoes. Add the broth, Garlic, Butter and Parmesan cheese. season the potatoes too if you want. 
Place the rack insert on top of the potatoes. 
In a separate bowl mix up the meatloaf ingredients. You might need to add more liquid, just see how it goes. The original recipe is only for 1 lb of meat. 
Shape the meat into a loaf and put it on some foil, fold up the sides to contain it and the juices. See above pics.
Make the glaze and smear 1/2 of it on top of the loaf. Add meatloaf foil pack to pressure cooker, on top of the rack.
Put the lid on the pot, seal it and cook on high manual pressure for 30 minutes. Done. 

There is an additional step on the website for broiling it after but I passed on making more mess.
