#29 Apple cookies 10/13/18 & 10/20/18

We like these so much I have them twice already




I didn't make the glaze so for that you will have to click the link. I just dusted them with powdered sugar. The original recipe also calls for nuts, which I omitted, and egg beaters- i just used 2 eggs.

1 c firmly packed light brown sugar
1/2 c margarine or butter, softened
1/2 c apple cider
2 eggs
2 1/4 c all purpose flour
1 1/2 tsp ground cinnamon
1 tsp baking soda
1/4 tsp salt
2 medium apples, peeled and diced (about 1 1/2 cups)

1. Preheat oven to 375 and line sheets with parchment or grease them. Set aside.
2. In a large mixing bowl, add sugar and margarine or butter and mix at medium speed until creamy.
3. Add cider and egg beaters and beat until smooth.
4. At low speed, gradually blend in flour, cinnamon, baking soda and salt until well blended. Stir in apples and almonds.
5. Drop dough by tablespoonful, 2 inches apart on prepared cooking sheets.
6. Place in oven and bake for 10 to 12 minutes or until golden brown.
7. Remove from oven and place cookies on wire rack to cool. Dust with powdered sugar.
