I found this recipe in a Penzey's Spices magazine and knew we HAD to have it. This would be a great Sunday dinner recipe...just sayin' ;)
After eating it, it reminded me of Chicken Kiev, but easier. I already can't wait to make it again.
The recipe
8 boneless skinless chicken breast halves
1/2 melted butter
1 cup crushed cornflakes
1/4 cup Parmesan cheese
2 Tbsp ranch dressing mix
Preheat oven to 350. Place melted butter in a wide shallow bowl. In another combine the Cornflakes, Parmesan and Ranch. Dip the chicken into the butter then roll in the Cornflakes mix. Place in a greased 9x13 baking dish. Bake, uncovered, at 350 for 30-45 minutes until crispy brown.
