Recipe: Cherry Jam

After accruing an abundance of Not So Sweet Cherries I decided to make so jam.
I figure there's enough sugar in jam that it should be OK. =) 

I just used the recipe from the Ball Jar of RealFruit Classic Pectin





Super Easy!
Mrs Jennifer's son said "That was the best Peanut Butter and Jelly Sandwich EVER"
She had made him a sandwich for lunch using it...so I would say it was a smash hit =)
So much so, she had a bunch of cherries. She pitted them for me and I made more!

Now, I did not make it so it was shelf stable. 
I made it to be consumed right away.
If you make this to be preserved on the shelf- read the instructions on the jar. 


The recipe is on the actual Jar of Pectin.
I used 
2 cups Cherries (pitted, washed and chopped)
3 tsp Lemon Juice
 1 1/2 Tblsp Pectin 
1 Cup of Sugar

Combine Cherries and Lemon Juice in large sauce pan. Bring to a rolling boil. Stir constantly.
Add entire amount of sugar, keep stirring until dissolved. Return mixture to a rolling boil. Let boil for a full minute- KEEP STIRRING. 
Remove from heat, skim any foam, if necessary. 
Ladle into jars, let set on counter til room temp, then refrigerate.
