#15 of 2020 - Chicken Bog, 3/24/20

I Haven't had this in 100 years so I thought I would make it. All of the recipes out there are similar. This is a pretty specific dish. My recipe was from a Taste of home cookbook. This recipe uses the instant pot but you can also make it on the stove or in the crock pot. 


Chicken bog is a delicious chicken, rice and sausage dish, and it's very much a South Carolina thing. Folks in surrounding states are likely to give you a blank stare if you mention it.

Specifically, chicken bog is most popular in Horry County - the home of Myrtle Beach and Conway - and west to Florence.

While there are recipes around that include green peppers and other vegetables, purists insist that the only ingredients should be chicken, smoked sausage, rice, salt and pepper and perhaps onion. Put a few drops of your favorite hot sauce on top, and it should be perfect.


Oil
1 Medium Onion, chopped
8 oz smoked Polska Sausage (Kelibasa), halved and cut into 1/2 inch pieces
3 garlic cloves
5 cups chicken stock, divided
2 cups uncooked white rice
salt and pepper
Rotisserie Chicken or any other cooked chicken. You can also cook the chicken in with everything but that is a different recipe hahah

In the IP- on saute setting: Add oil then add the onion and sausage and cook until the sausage is lightly browned, add garlic and cook another minute
Stir in 5 cups of stock, rice, salt and pepper. Cook on low pressure for 3 minutes. When finished cooking, allow pressure to naturally release for 10 minutes, then quick release remaining pressure. 
On saute again stir in cooked chicken and last cup of broth- cook until heated through, about 5 minutes.
