Foodie Friday: Banana Bread Bars

Q was getting ready to go on vacation and I wanted to make him something to share on the 12 hour train ride. Originally I pulled out my: 

to make chocolate chip cookie bars. 

As I flipped through to find the recipe I saw:

on page 44.

We had an excess of brown bananas so I made this instead!



Combine Flour, Baking Powder and Salt in a bowl. 

Beat Butter, Granulated & Brown sugars, and vanilla until  creamy.

Beat in bananas and egg.

Gradually add in flour mixture..

..than morsels

spread into prepared pan

Bake 20-30 minutes @ 350 degrees

The Recipe

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) butter or margarine, softened
  • 2/3 cup sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup (about 3 medium) mashed ripe bananas
  • 1 large egg
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels
  • Powdered sugar

Directions

PREHEAT oven to 350°F. Grease a 15x10-inch jelly-roll pan.

COMBINE flour, baking powder and salt in medium bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixing bowl until creamy. Beat in bananas and egg. Gradually beat in flour mixture; stir in morsels. Spread into prepared jelly-roll pan.

BAKE for 20 to 30 minutes or until wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Sprinkle with powdered sugar.
