Make it Monday: Red Velvet Cupcakes

I made 3 flavors of tester cupcakes for a September Wedding.
Today you will get one of the recipes!
It felt like cupcake wars over here!

The flavors were Chocolate, White Wedding cake and Red Velvet

Are you hungry yet for yummy cupcakes? =)

Ahhh, yes, the Red Velvet Cupcakes.
I got the recipe from Food Network- but I have it posted from the actual web site..
just in case Food Network pulls the recipe...

These were the ones for the Bride-
the rest went to work or were consumed at home =)
Rave Reviews!
Especially for the Red Velvet Cupcakes!
I would totally make these again!

(I made cupcakes)

Servings: 16 to 20 servings
Prep Time: 20 min
Cook Time: 25 min
Difficulty: Moderate

Ingredients

1 teaspoon vanilla
1 cup buttermilk
1 teaspoon salt
2 1/2 cup cake flour
1/2 lb (2 sticks) butter
2 ounces red food coloring
2 tablespoons cocoa
2 cups sugar
2   eggs
1/2 teaspoon baking soda
1 tablespoon vinegar

Icing:   (the Bride To Be did not want Cream Cheese Icing- she wanted butter-cream on all 3 flavors)
1 16-ounce box of confectioner’s sugar
1 stick butter, softened
1 cup melted marshmallows
1 cup shredded coconut
1 cup chopped pecans
1 8-ounce package of cream cheese

Directions

Preheat oven to 350 degrees. Beat eggs; add sugar.  Mix cocoa and food coloring.  Add butter and egg mixture; mix well.  Sift together flour and salt.  Add to creamed mixture alternately with buttermilk.  Blend in vanilla.  In a small bowl, combine soda and vinegar and add to mixture.  Pour into three 8-inch round greased and floured pans.  Bake for 20 to 25 minutes, or until tests done.
Icing:
Blend cream cheese and butter. Add marshmallows and sugar and blend.  Fold in coconut and nuts.  Spread between layers and on top and sides of cooled cake.

Strawberry Rhubarb Freezer Jam- Recipe included!

Tis the season for Rhubarb!
After Harvesting,  I froze the Rhubarb until I was ready to make jam.
I also had been freezing excess strawberries.
So this year I made the jam using frozen fruit.

I used the same recipe as the previous years- with one less cup of sugar.
Combine Rhubarb, Pectin and water. Mix well
(2 C Rhubarb, 1 Box Pectin, 1/2 C water)
Cook until Rhubarb is tender and Pectin is dissolved, continuously stirring.
(About 10 mins)

Add Sugar (4-5 cups) and stir. Keep cooking another 5-10 minutes,
until mixture boils after stirring each minute, about 3-5 mins.

Add strawberries (1.5 c)
Since they were previously frozen I did not crush them prior to adding.

As the mixture cooked I crushed them and cooked about 5 more minutes.

Ladle into jars and let cool before putting in the refrigerator/freezer.

Recipe from Cooks.com

2 C-sliced Rhubarb
1/2 C-water
1 Box of Powdered Pectin
5 C-Sugar (I used 4)
1.5 C-Strawberries

WIP Wednesday Bonus! Bottle Apron

My Friend On Ravelry made one of these and I just HAD to make one too!!

The Pattern is HERE
However the Skirt is not the same as the Pattern
I used CorrineMB's "own fiddly thing" for that ;)

I think it looked better on the hand soap than the Dish Soap Bottle...

Don't Judge...  ;)
Ahhahahahaha

WIP Wednesday: Dish Rack towel

I had purchased some 1lb. Cotton Milled Yarn Ends from Pat Catan's last summer for cheap and decided to finally use some.

We usually just put 2 dish towels under the Dish Drainer to catch any excess water,
but I decided to make one large towel (well 2 more pics coming)

My car seat LOL

Stats:
Using an I hook, this was 60 sts across.
It needed to measure about 20x24 inches...
and I think it did before it was washed, but Cotton Yarn shrinks
and I don't think I took that into account.
