- 2(6 -8 ounce) boneless skinless chicken breasts- pounded thin- or get thin sliced chicken
- 1⁄2cup chopped fine almonds
- Salt and Pepper to taste

- 1pinch cayenne
- 2
- 1teaspoon Dijon mustard
- 1⁄8teaspoon ground black pepper
- 1⁄2
Combine: Almonds, Panko, butter and a pinch of salt- microwave until golden brown, stopping to stir frequently (2-3 Minutes)
In another bowl whisk egg, flour and cayenne
Pat chicken dry and season with salt and pepper, dredge in egg mixture (let excess drip off) and then coat with the panko mixture- pressing the panko into the chicken
Spray air fryer basket and chicken breasts- cook on 400 for 15 minutes, flipping half way
