Foodie Friday: PB & Chocolate Chip Cream Cheese Cookies

Mrs Jennifer was having a field day at working looking at recipes a few weeks ago.
She would find one and the email would say "please make" or "No I mean this one"
or my personal favorite, "Heaven Recipe: Please disregard all other prior requests".
Keep in mind readers...Jennifer KNOWS how to bake and does so very well lol

She organized a row party for our row, for the 4th of July.
I thought this would be a fun and easy recipe to try.

There are 5 ingredients:
Seamless crescent rolls
Sugar
Cream cheese
Peanut Butter chips
Chocolate Chips
Really...that's all there is to this.

Mix the Sugar & Cream Cheese together

Roll out Crescent roll and make it rectangular

Spread Cream Cheese mix then press the chips into the roll

Roll up the crescent, wrap in wax paper, and freeze for 2 hours.

Pull out of the fridge, slice and bake!

Ingredients
1 can seamless crescent rolls (or pinch together seams on a regular can, or make your own with the recipe I posted before)
8 oz cream cheese, room temperature
1/3 cup sugar
2 tsp vanilla
¾ C mixed peanut butter and chocolate chips
Directions:
Beat sugar, cream cheese and vanilla together until smooth and creamy.
Unroll the crescent roll sheet onto lightly floured surface. . Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough.
Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch.
Sprinkle your chips on top of cream cheese – press them in lightly to aid in rolling.
Roll the crescent sheet up tightly and wrap in cling wrap.
Place in freezer for at least 2 hours it won’t get really solid as the cream cheese mix won’t freeze hard.
When chilled preheat oven to 350°.
Line a cookie sheet with parchment paper (prevents sticking and helps in cleanup).
Slice the crescent roll into 1/4″ slices. They won’t keep the precise round shape, but that is fine!
Bake on prepared cookie sheet for 12 -14 minutes until crescent roll appears golden brown.
Cool on the parchment paper or wire rack.
Enjoy! They are soft and oh so yummy!!

FO: Under da Sea, Little Mermaid Shawl

I took a detour on the way home to the yarn store to look around.
I walked in....
Then I saw it....
I HAD to have it....it SPOKE to me.

It reminded me of a mermaid and of the sea.

I used the same pattern that I used for Jenn's Gone Banana's, see last post.
It looks more green in this pic...

...but this outside picture give you a better idea on the true colors.

Pre Blocking- 45' x 22' inches
I used almost EVERY bit of the yarn. There is a golf ball left of yarn.

So here I am soaking this shawl...
LOOK AT THE WATER!!!
I thought for sure I was going to pull this out
dnd there would be no color left on the fiber.

But alas....it's all good LOL

Final measurements: 56' x 30'
By blocking I gained several inches to the shawl.

FO: Jenn's Gone Bananas!

Mrs Jennifer had a few dressy up event's to attend this year
so I wanted to make her a cute shawl to wear to jazz up her outfits! =)
It has that name because she brings me in bananas so my potassium doesn't get too low.
I have low potassium from my Crohn's or something.
She's so thoughtful!

Here are the beginning's of the shawl:

Her are the pre-blocked pictures

Here she is all pinned out!

Ta-dah!!
I must make one in this yarn for myself!
It has such a nice drape to it!
I plan to make the points pointer on mine.

Foodie Friday: Apple Bread

BEST APPLE BREAD EVER

So what happened was- I had left over gala apples that had been hanging around in the fridge for a long while. I Googled Gala apple bread recipes and found Hot Sin Apple Bread and it has changed my life LOL
I made this 6/26/14 and within 26 hours it was GONE, both loaves.
You can use any baking apple to make this (Gala, Fuji, Macintosh, Granny's)
I also read in the comments where folks used applesauce in place of half or even all of the oil...might have to try that too one day.

Ingredients:

Serves: 12-16
Yield: 2 loaves

3 whole eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
4 cups grated apples (I didn't measure)
**I added a generous sprinkle of cinnamon to the batter**

Topping mix
1/2 cup sugar
1 tablespoon cinnamon
2 teaspoons flour (didn't use)
1/4 cup butter or 1/4 cup margarine (didn't use)
**I mixed up some cinnamon and sugar, sprayed the pans with baking Pam spray than just sprinkled the mix into the pans- the Pam helps it stick. Also the directions will tell you to save some for sprinkling on top, but I didn't do that this first time....yes there has already been another 2 loafs made...**

Directions:

1
Grease and flour 2 loaf pans. mix the topping ingredients together and put half of mixture into bottom of prepared pans.
2
Mix eggs, sugar, oil, vanilla, baking soda and salt together. Put in grated apples and 3 cups flour and mix together, then place ingredients into pans.Sprinkle remaining topping mixture on top of apple mixture. and place in a preheated 350 degree oven for 1 hour. Makes 2 loaves.

7/1/14:
2 more- but this time I added the topping.

FO: Corrine's Birthday Scarf

Corrine was celebrating a birthday on July 1st (not 3rd lol) so I wanted
to make her a gift that she totally can't use yet! ;)

It's a combination of Grays, Orange and a Light Pink.
I thought it was a fun design for a gift!
It measures over 60 inches long and 9 inches wide.

Details
Started: 5/27/14
Finished: 6/29/14
Hook: H
Yarn: Vanna's Choice in:
Silver Gray, Silver Blue, Soft Pink and Radiant Orange

I followed the pattern as written. Next time I might try to figure out how to carry the yarn up the side of the project so there aren't so many ends. I don't know if it would work, but I also might figure a way out to make it not as wide.

GO USPS!! I sent that bad boy at 11:30 Thursday and it arrived to Connecticut Saturday!
With the 4th of July Holiday on Friday!

Cookies with Kate

Kate wanted to decorate cookies for her graduation present from us! =)
We had her over 6/28/14 for a cookie extravaganza!!
She had stopped over a few weeks ago and was able to pick out what cookie cutters she wanted to use.
There were 19 total, but then I went and bought an elephant (her favorite animal) and a rocket (the school logo)
***apparently she had been asking Q for months when I was going to make cookies again because she wanted to come help decorate...and he JUST told us about it in MAY....
So I busted out all of the sanding sugars....
and Q helped me make the icing.

I am not sure how many cookies I baked off.
(there were a minimum of 3 per cookie cutter and some I know had several more) ,
Here are most of the decorated cookies!
The Purple and Pink tie was Q's favorite

I made the spotted elephant from Rudolph.
Daisy is Kate's dog.

I love Kate's Patriotic Tie!!!
AND Q's Irish Dress he decorated.

I can't wait to see what we come up with next time!!!
