#25-Chocolate Depression cake, 5/19/20






If you just google "Chocolate Depression Cake" tons of results will populate. I think I came across Depression Era recipes on Yahoo and then just started looking into them. They are all pretty similar. I added chocolate chips to mine- I might have added espresso powder too but I can't say for sure. The recipes are designed to be cheap and cheerful- not using expensive ingredients like Milk or Eggs. I would totally make this again. Fun Fact- we had one piece leftover on the table for a few weeks and it didn't mold or smell funny in the least. No, we didn't eat it though. I imagine it had to be because there were no ingredients in it that would spoil technically. I did not make a frosting but there are also depression type recipes for that. Or just schmear some Peanut Butter on it, that also works. :)



INGREDIENTS

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1/3 cup vegetable oil
  • 1 cup water

INSTRUCTIONS

  1. Combine flour, sugar, cocoa powder, salt and baking soda in a large mixing bowl.
  2. In a separate bowl, combine vanilla, vinegar, oil and water. Add wet ingredients to dry ingredients and mix until completely combined and no lumps remain.
  3. Pour batter into a greased 8x8 square pan.
  4. Bake in a preheated 350 degree oven for 30-35 minutes, until toothpick inserted in center comes out clean.
  5. Let cake cool completely if frosting.
