No Bean Chili, inspired by this Blog
Q came home for Mother's day so I made no bean chili to try.
We had some good chili at a restaurant and they added straight up hamburgers in theirs so we did the same thing. I used the Chili IP setting. used 1 tsp Onion and Garlic Powder and 1/2 tsp cocoa. Next time use less chili powder (I used 2 Tbsp per the recipe)
INGREDIENTS
Seasoning mix:
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 2 tablespoons chili powder
- 1/8 teaspoon cayenne pepper
- 1/2 (6 oz can) tomato paste
- 2 tablespoons minced garlic
- 1/2 tsp cocoa powder
Chili:
- 2 tablespoons olive oil
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 lb. ground beef
- 2 Hamburgers- cooked
- 1 1/2 teaspoons kosher salt divided
- 1 cup beef stock
- 1 (15 oz) can diced tomatoes, undrained
- 1 bay leaf
- 1/4 teaspoon black pepper
INSTRUCTIONS
- In a small bowl, with a fork, mix together the seasoning ingredients to create a thick paste.
- Heat the oil in the pressure cooker on Saute, add beef and season with Onion powder, Garlic Powder and 1/2 teaspoon kosher salt and cook, stirring to break up the meat, about 7 minutes until the meat is browned.
- Add the seasoning mixture (use a small spatula to scrape it off the bowl) and cook, stirring to mix it into the beef, one more minute.
- Add the beef stock, tomatoes, bay leaf, the remaining salt and the black pepper. Lightly mash the diced tomatoes while stirring them into the mixture. Bring to a boil.
- Cancel the Saute, put the lid on, seal and choose the Chili function. Let naturally release for 10 minuted then manually release the remaining pressure.
- Garnish the chili with your favorite toppings and eat.
