Penzey's Apple Bread, with recipe

I found this recipe in the latest Penzey's spices magaine, Thanksgiving 2015
This magazine came around the time the plethora of apples did- it was perfect!

You still have plenty of time to make this for Thanksgiving. It would make a nice breakfast and leave you room for all of the turkey and ham!

Ingredients

3 Cups apples, peeled, cored and diced (4 medium)
3 Cups flour
1 tsp. baking soda
1/2 tsp. salt
2 Cups sugar

1 tsp. PENZEYS CINNAMON
1 1/4 Cups vegetable oil- I had no oil so I used apple sauce
3 eggs
2 TB. PURE VANILLA EXTRACT
Directions

Preheat oven to 350°. In a large bowl, combine the flour, baking soda, salt, sugar and CINNAMON. Add the oil, eggs and VANILLA and mix well. Fold in the apples by hand. Divide the batter between two 8x4-inch greased loaf pans. Bake at 350° for 1 hour or until a toothpick inserted in the center comes out clean. The batter is very dense, almost like cookie dough, and the loaves don’t rise much. Very delicious though!
