We had some mashed potatoes to get rid of from Easter so I decided to try to make Mashed Potato pancakes with Ham, topped with a fried egg.
They seemed to take forEVER but they were quite tasty :)
1-2 eggs
1/4 C Flour
Salt, Pepper, Garlic and Onion Powder
Ham (and Cheese if you want)
Oil for frying
Mix all of the ingredients together, except the oil. Making sure the batter isn't too thin.
Preheat the skillet with oil.
Drop batter by 1/4 cup scoops into the hot pan. I used a large ice cream scoop.
Cook until browned on both sides.
Serve as is, or in our case I made over easy eggs.
