A friend sent me this recipe to try and it was great! She makes it regularly and though we might enjoy it. We always have pork ramen on hand so it was a perfect fit.
I made the base of the meal without the veggies, then added specific veggies to each of our bowls. Hubby gets green onions, I get matchstick carrots and riced garlic cauliflower. Next time we would like to try it with beef.

tablespoon vegetable oil

pound pork tenderloin, cut into 1/8-inch strips

packages (3 ounces each) pork-flavored ramen noodles

cups water

medium red bell pepper, cut into 3/4 inch pieces (1 cup)

cup broccoli flowerets
4
medium green onions, cut into 1-inch pieces (1/2 cup)
1
tablespoon chopped fresh parsley or 2 teaspoons parsley flakes, if desired

tablespoon soy sauce
- 1 Heat 12-inch skillet or wok over medium-high heat. Add oil; rotate skillet to coat side.
- 2Add pork; stir-fry about 5 minutes or until pork is no longer pink.
- 3Gently break apart noodles. Stir noodles, seasonings from flavor packets and remaining ingredients into pork. Heat to boiling. Boil 3 to 4 minutes, stirring occasionally, until noodles are completely softened.
