My new Mason Jars
Lisa and I went to a craft fair 3/21/2015 in North Olmsted to hang out and support her Stepdaughter Josette! She sells all kinds of fun items: Headbands, Hair Clips, Mason Jars, Dream Catchers and more.
I bought this cute mason jar (I added the lid) to store all of our Chinese Fortunes I have saved. You can also chalk on the heart. The funny thing is- this was part of a set and I didn't realize it...but at the same time another woman bought the match to mine! hahah It worked out well.

Amelia's Carrot Cupcakes, with Recipe
Jenn asked if I could make Amelia some cupcakes for her 4th birthday! Amelia asked for Carrot Cake!! Jenn was like " I don't even think she has ever HAD Carrot Cake" Jenn did all the hard work of getting me the raisins, shredding the carrots, getting the wrappers and carrot decoration for the top for me. I just baked them haha
It sounds like they were a big hit at the party 3/14/2015.
It was spring themed. Aren't these the CUTEST cupcake wrappers??

Pizza Saturday
I ran down to the bakery yesterday and picked up some fresh dough for pizza! I had left over Meatballs & sauce so I just used that. I also bought some garlic butter at the bakery.
I stretch the dough, with the help of corn meal. Spread the butter on it, next the sauce & meat, than the cheese. Bake at 325 for 30 minutes- until the cheese is golden. It was EXTRA cheesy today! ♥

FO: Lisa's Shelly Scarf
I decided I wanted to make a scarf for one of my favorite peeps, Lisa. This pattern started making the rounds on Ravelry and I thought it was perfect. I was even gifted a beautiful fun Shelly for Christmas ;) After consulting with her son Calvin, hubby and I went to Michael's to pick out the perfect yarn. I gave it to her 3/21/15 and she loved it! I asked Calvin if it should be a regular scarf or an Infinity. He said he didn't think she had any infinity scarves...so she does now! =-)
I enjoyed making the pattern, though I modified the ends to make them straight. The pattern calls for them to bump out.

Potato and Buffalo Chicken Casserole, with Recipe
Let me start by saying I have already made this twice in one month. The first time Hubby was 4 bites in and declared "I'd eat this again!" I didn't even have to ask =-)
The first time I made this in my Toaster Oven, the second in the oven. I don't think I did anything different other than that, but I sure did enjoy it more the second time! The potatoes were more crisp the first time (which I like) so I am not sure what the deal is. The other difference was I used Canned chicken the second time so we could eat quicker. I didn't have to worry about if the chicken was raw or not.

Cal's party (From JULY...I am a loser lol)
Let me start off by saying I have been wanting to post this but wanted to find old pics of the boys and I and never came across what I was looking for...When we were taking the pics Cal asked if they would make the blog =) So here they are finally LOL.
Calvin's High School Graduation party was in July and we had so much fun! There were less people there than Nick's in 2011 because there was a pre-party the Friday before for all of his Friends. It was good to be able to spend time with both of them without as much traffic. =-)
Apparently I am the small fry now...
I was being teased that now THEY can hide stuff from me on top of the refrigerator instead of the other way around....
Really???????

Rice Balls, with recipe
Q has been mentioning Rice Balls for a while so I figured I better get cracking. The family went out to dinner for Q's birthday to an Italian restaurant and they had cheese Arancini (Rice Balls in Italian) that I would like to try to make next. I made these only one other time. The recipe can be found HERE.
In a nutshell, you cook the rice and the meat. Mix them together with some sauce and cheese.
Portion them out-I used a large ice cream scoop.
While filling them I added a nugget of cheese.
We let them rest in the refrigerator several hours to make it easier to bread them.
Then we deep fried them.
1 Cup of uncooked Rice
2 Cups of Water (to cook the rice with)
Olive Oil (to fry the meat)
Garlic, minced
1/2 lb or Ground Beef or Sausage
Salt and Pepper
Tomato Based Pasta Sauce (2 cups total)
Grated Parmesean Cheese
1/2 Cup Mozzarella
2 Eggs beaten
1 Cup Dry Breadcrumbs
1. Cook the rice. (I used my rice cooker). While rice cooks fry up the meat in olive oil, over medium heat, crumbling the meat. Cook until no longer pink, approximately 10 minutes. At this point I add the garlic and cook a minute more. I am always scared to cook it first and burn it. Been there Done that. Drain excess grease.
2. Place hot cooked rice, meat, salt and pepper, 1/2 cup of pasta sauce, parmesean & mozzarella cheese in a large bowl and mix together. Scoop rice mixture, form into balls and place on a baking sheet. When scooping you can add cubed cheese to the center. Refrigerate, I recommend at least 4 hours, butt he recipe says 20 minutes.
3. After they have chilled you have 2 options. You can preheat the oven or deep fryer to 350. While they are preheating, roll each rice ball into beaten egg then breadcrumbs, place back on cookie sheet. You can then bake them for 25-30 minutes or deep fry them for 4 minutes. We have made them both ways and prefer the deep fryer method. Serve with the remaining pasta sauce and cheese if you like.
