We just LOVE this recipe.
I didn't make the glaze so for that you will have to click the link. I just dusted them with powdered sugar. The original recipe also calls for nuts, which I omitted, and egg beaters- i just used 2 eggs. You can also use margarine.
** Note to self- Dice the apples SMALLER next time...This was like having baked apples with some cookie on it. Still great though.
1 c firmly packed light brown sugar
1/2 c butter, softened
1/2 c apple cider
2 eggs
2 1/4 c all purpose flour
1 tsp baking soda
1/4 tsp salt
2 medium apples, peeled and diced (about 1 1/2 cups)
1. Preheat oven to 375 and line sheets with parchment or grease them. Set aside.
2. In a large mixing bowl, add sugar and butter and mix at medium speed until creamy.
3. Add cider and eggs and beat until smooth.
4. At low speed, gradually blend in flour, cinnamon, baking soda and salt until well blended. Stir in apples.
5. Drop dough by tablespoonful, 2 inches apart on prepared cooking sheets.
6. Place in oven and bake for 10 to 12 minutes or until golden brown.
7. Remove from oven and place cookies on wire rack to cool. Dust with powdered sugar.
