Yes, you read that right. Lasagna Stuffed Meatloaf
The boys sent me this to attempt to make for them - so for Q's birthday I attempted. I of course had to make one for us as a tester ;)
We liked it, they liked it. They liked it so much they requested more when they were home on Spring Break. For them I make them up but then freeze them raw for them to cook at a later date.
3/10/19:
1lb ground beef
2/3 cup breadcrumbs
2 eggs
3 cloves of garlic, minced
1 tbsp tomato paste
Parsley, salt and pepper

Filling:
2 cups ricotta
salt and pepper
4 Fresh Lasagna noodles cut to fit
1 1/2 cups tomato sauce
Mozzarella

Directions
- Preheat oven to 350
- In a large bowl mix together beef, bread crumbs, eggs, parsley, salt, pepper, garlic and tomato paste until combined.
- Press 3/4 of mix into a loaf tin along the bottom and press up the edges keeping a well in the middle.
- Mix together ricotta with salt and pepper.
- In the well, layer lasagna followed by ricotta, slices of mozzarella. Repeat with 4 layers with the last layer being lasagna.
- Cover with remaining meat to seal.
- Bake for 30-40 minutes covered with foil. Take out and flip over onto a tray. Top with tomato sauce and slices of mozzarella. Broil in the oven until golden brown and bubbly.
