Dinner Rolls, #2

I found this recipe on OneHundredDollarsaMonth.com. Go check out her blog- she posts tons of recipes and tips.
 It was so easy (with my stand mixer) and Hubby and I enjoyed them. I made them to go with the Cheeseburger soup. 



Make sure to not kill your yeast- check the liquid temperature. It should be around 100 degrees or so- check the package. Mine was 140+ but luckily I checked the temp before my bread was a fail.

Since I had the oven going earlier this was the warmest place for the dough to rise- I just covered it with a tea towel.

Top with butter and you are ready to rollllllll.

Ingredients
2 cups all-purpose flour
1 envelope rapid rise yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
4 tablespoons butter
In a large mixing bowl, combine 3/4 cup flour, yeast, sugar and salt and set aside. In a microwave safe bowl, combine milk, water and 2 tablespoons butter and microwave until very warm, between 120 degrees and 130 degrees. Double check the liquid temp. In stand mixer with paddle attachment, beat in flour mixture at medium speed for 2 minutes, scraping down sides as needed.
Add 1/4 cup flour and beat for another 2 minutes at high speed. Stir in remaining flour {add additional flour if dough is sticky and not soft}. Pour onto a lightly floured surface and knead until smooth for about 10 minutes {or use paddle attachment to do this in the bowl-thats what I did}. Cover and let sit for 10 minutes.
Shape dough into 12 equal balls. Place dough balls in a greased 8-inch round pan. Cover and let rise in warm area until dough is doubled in size {about 30 minutes}.
Bake at 375F for 20 minutes or until tops are golden. Place on a cooling rack, brush with remaining melted butter.
