I found this recipe in a Fix it and Forget it Crockpot cookbook from the library.
You can probably make it with ground chicken or turkey too.
Tasty Meatball Stew
meatballs
2 lbs ground beef
2 beaten eggs
2 Tbsp dried onion
2/3 cup breadcrumbs
1/2 cup milk
salt & pepper, and whatever else you like in your meatballs
1 tsp mustard
2 tsp Worcestershire sauce
Stew:
6 medium potatoes
1 large onion (I passed on this)
8 medium carrots
4 cups broth (I used beef stock, but vegetable would work too)
salt, pepper and whatever else you like
Mix Meatball ingredients in a bowl, form into 1 inch balls. I fried mine up, but you can also bake them on a lightly greased cookie sheet, 400 degrees for 20 minutes.
While the meatballs are cooking, prep vegetables and place in crock pot.
When meatballs are cooked, blot off excess grease and place the meatballs on top of the veg in the crock pot.
Pour in broth/stock and season. Cook on high 4-5 hours, or until veg is tender.
Tips:
Feel free to use frozen meatballs or your own meatball mix.
If you need more time- if you want to cook this and you will be gone more than 4 hours, just cook it on low.
