#28, Ham Potato and Egg casserole, 10/2/18

I had some old frozen ham I wanted to get used up so I googled Ham and eggs and this recipe happened,
Not only would I make this again- I might add less eggs in the mix and slap a fried egg on top before serving.  I did that one night with the left overs.

#22-Chocolate Peanut Butter Banana Overnight Oats, 7/18/18

Before:

After:

Chocolate Peanut Butter Banana Overnight Oats

Ingredients
  • 1 medium banana(s), halved
  • 1/3 cup(s) uncooked old fashioned oats
  • 1/2 cup(s) unsweetened chocolate almond milk
  • 2 Tbsp chocolate peanut butter powder
  • 1 pinch table salt

  • I imagine you have plenty of options with this recipe: Using Protein Powder, Regular Milk or Regular peanut butter. But this is a Weight Watchers recipe so they are just trying to make this healthier I suppose. I made it as the recipe calls for- I have made it 3-4 times already for when I have to report to the building and it's great.
  • Instructions
Mash half of banana in a medium jar or large glass; chop other banana half and add to jar with remaining ingredients. Stir, cover and refrigerate overnight; serve (garnished with fresh banana, optional).

I saw this made on Food Network a while back.  I make other versions of lemon chicken so I thought I would give it a try.

#17 Rhubarb Breakfast Cake, 5/30/18

We harvested 10 cups of rhubarb this year from our plants. We probably would have had even more if I would have went out regularly and harvested them. =)

#16 PC Western Ribs, 5/29/18, #2 PC recipe

I thought I made western ribs in the pressure cooker but if I did I can't find the post.
They are so tender in the pressure cooker. Hubby sears them on the grill first then I toss them in, but that isn't a requirement to the recipe.

#14 Italian Easter Meat Pie, 3/31/18

I decided to google traditional Easter recipes and found this interesting looking one for an Italian meat pie. I also decided to make lemon cookies so those pictures are scattered in too.
