Foodie Friday: Hawaiian Pulled Pork



This is one of Q's favorite recipes! 

I always make sure I get a big roast when I make this =) 
The most recent time I made this- I put it on Friday night and Q ate a big sandwich for breakfast! 
It was great. I told Hubby I should put stuff in the crock pot more often on the Friday night when we have Q here and he can munch all day! 


Coat the pork the with rub mixture, patting until all rub is used. Set aside.
Put the chopped onions and carrots in a 5-quart slow cooker. Place the pork on top of the carrots and onions and pour half of the pineapple juice mixture over pork. Reserve remainder for Hawaiian sauce. Cover and cook on low for 7 to 8 hours.


 The meat should fall apart easily. Remove the roast from the slow cooker to a cutting board. Using 2 forks carefully pull the meat into shreds.
***I just leave it in the crock pot and shred it...why make more dishes? =)



Ingredients
1 packet teriyaki marinade (recommended: McCormick Grill Mates)
1 tablespoon paprika
1 teaspoon fresh ground pepper
3 1/2 pounds pork shoulder
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup soy sauce
1 cup chili sauce  **I don't use this much
1 (6-ounce) can pineapple juice
1 medium onion, chopped
2 carrots, chopped
8 hamburger rolls
Hawaiian Sauce:
2 tablespoon canola oil
1 tablespoon ginger, chopped **Or this
2 teaspoons garlic, chopped

**When I make a larger roast I double the ingredients

Directions
In small bowl, combine teriyaki mix, paprika and pepper.

Reserve the remaining pulled pork for the Round 2 Recipes, Pulled Pork Pot Stickers and Hawaiian Pizza.

Hawaiian Sauce:

In a medium pot heat the oil over medium heat. Add garlic and ginger and saute until soft, about 2 minutes. Add the remaining pineapple juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and set aside

WIP Wednesday: Scrapghan progress

Scrapghan Progress! 
If you want to see the first post go here.

It has gone from 38 squares to 54 
(and Sunday 5/26 during the NASCAR race, Coke 600, I made an additional 16)
It currently measures approx. 36x50 inches 
and after those addt'l 16 squares are added it should be about 40x54ish inches. 

I am still undetermined how big this will be as I still have a TON of scrap yarn...
However I do know I do not want 2 of the same square sequences...

First Rhubarb of the season

UGGHHHH

SO here is my beautiful 4 cups of Rhubarb from my Rhubarb patch from 5/8/13 
that was totally wasted on 
Rhubarb & Sour Cream Cake- more like bread

I had this in the over for almost 2 hours...then I checked it with a knife and it came out 'clean' 
I cut into it 2 hours later and it ooozed all over...
Never again...I didn't read the reviews before baking...my bad...
it was a BAD review like how I felt about it. 

I posted the recipe below...good luck if you try it.
I on the other hand have tossed the recipe away...






Directions

RECIPE INGREDIENTS

1/4 cup unsalted butter, at room temperature
1 1/2 cups lightly packed brown sugar
egg, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour, sifted
1 teaspoon baking powder
1 cup sour cream
4 cups sliced rhubarb (1/2-inch pieces)
1/3 cup superfine sugar
1/2 teaspoon freashly grated nutmeg
heavy cream, for serving

Preheat the oven to 375 degrees F. Butter an 8 x 5-inch loaf pan and line with parchment or waxed (greaseproof) paper.

Cream the butter and sugar until fluffy, about 3-4 minutes. Beat in the egg and vanilla. Fold in the flour and baking powder alternately with the sour cream and rhubarb.
Pour the mixture into the prepared pan. Combine the sugar and nutmeg and sprinkle over the cake mixture.
Bake for 40 minutes, or until a skewer inserted in the middle of the cake comes out clean. Allow the cake to cool in the pan for 30 minutes before turning out.

Foodie Friday: The Chew's Sloppy Mikes


This recipe was super easy! Love it!
Michael Symon made this on the Chew.
Hubby enjoyed it as well, enough that he said he'd eat it again! LOL
The recipe is below =)


2 tablespoons olive oil and bacon. Cook for 1-2 minutes. Add onion to pan and continue cooking. Add tomatoes and simmer for another minute.


Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add ground beef with a pinch of salt and paprika.

Transfer onion, tomato and bacon mixture to the browning meat. Stir to combine ingredients. Add cheese and stir to combine and melt. Note: If the meat is too dry you can add a little chicken stock to help moisten it.

Michael Symon's Sloppy Mikes


  • 1 pound Ground Beef
  • 3 strips Bacon (diced)
  • 4 White American Cheese Slices
  • 4 Potato Rolls
  • 1 12oz Canned Chopped Tomatoes (crushed)  **I used canned tomato sauce LOL since I don't like diced tomoato
  • 1 Onion (diced)  **Yeah didn't use this either-just onion powder
  • Salt
  • 1 tablespoon Smoked Paprika
  • 4 tablespoons Olive Oil (divided)
  • Chicken Stock (optional)

Directions

  • 1

    **At this point after cooking the bacon, I seasoned it with the onion powder, then added tomato sauce and some tomato paste, seasoned and cooked the sauce down a bit to make it thick.

WIP Wednesday: Diagonal Hot Pads

Double thick Diagonally Crochet Pot Holder by

This project took less than 2 hours to make so there are no WIP pics LOL

I made this on on 4/16/13 using cotton yarn and a K hook
It measures 7 inches x 6 inches and as it works up it folds into itself so it is double thick!





This one was made 4/17/13
It measures 7.5 inches x 8 inches
I used Sugar N Cream Cotton yarn in Hot Blue and a J hook
It now resides at Arleen's House =)

Public Works Vehicle Convoy Tribute to Frank Scarcelli



I had been meaning to post these videos from You Tube on here...they have been in my drafts for awhile.

This is a Video by Thelma Carr showing all of the Public Works Vehicles that drove through the City, from the Funeral Home to the Grave Yard from my Uncle's funeral. There were approximately 50 vehicles that drove ahead of the hearse.

CLARKSBURG — The public works building in the Glen Elk No. 2 section of Clarksburg now has a new name.

City officials dedicated the 21-year-old brick facility in memory of longtime Public Works Superintendent Frank Scarcelli.
Scarcelli, a fixture with the city for more than 40 years, died in June.
Scarcelli’s widow, Karen, and his daughter, Allison Debusca, unveiled the building’s new name before 75 to 100 family, friends and city employees gathered on the center’s south lawn.

Foodie Friday: Michael Symon's Bacon and Corn Cavatelli


I love watching The Chew and have ton's of recipes from them I have been wanting to get to. 
I think this was one of his 5 in 5 meals on the show.


 In a large saute pan, add the olive oil and bacon-fry til crisp



 Next add the corn, tomatoes and garlic, cook for an addt'l 4 minutes
****We don't eat diced tomatoes around these parts so I used a can of tomato sauce that I seasoned***



Add the Cavatelli to the pan and toss with parsley, butter and a pinch of Salt and Pepper. 


Garnish with Pamigiano Reggiano

Hubby says there should not be corn in pasta and didn't even try it =(  
But his not into mixing corn into his food anyway so I didn't think he would eat it...Mom agreed...

BUT I LIKED IT and will have to make it for Q since he was not here when I made it. 
Arleen liked it to, I brought some in to work for her to try.



Michael Symon's Bacon and Corn Cavatelli

Ingredients:

1 pound of Fresh Cavatelli
2 T EVOO
1/4 lb Bacon (diced)
2 ears of Corn (cut from the cob)
2 cloves Garlic (sliced)
1 pint of sweet 100 tomatoes
1/2 bunch Parsley
3 T butter
Parmigiano Reggiano (grated for garnish) *(the in disputed king of cheeses, per Mario)


1. Bring a large salted pot of water to boil
2. In a large saute pan, add the olive oil and bacon-fry til crisp, Next add the corn, tomatoes and garlic,  
    cook for an addt'l 4 minutes
3. Drop Cavatelli into the boiling water and cook one minute less than the specified cook time
4. Add the Cavatelli to the pan and toss with parsley, butter and a pinch of Salt and Pepper. Garnish with Pamigiano Reggiano

Mini's new toy 4/29/2013

We received a coupon for a free toy from Pet Supplies Plus for Mini's birthday in April.
After careful consideration I picked out a carrot looking toy 
with a feather for a stem and loaded with Cat Nip.

It was a huge hit!!!  I had to hold off the boys while she enjoyed her toy...
after she finished I let them have at it.
It is still going strong!

I started it April 21 2013
Finished April 25 2013

 I made the Rainbow for Nyan Cat using Lucy's Neat Ripple Stitch



Nyan cat itself came from :NiklSaurus


I used a G hook to create him =)



For the sprinkles I just stitched them on with a darker pink yarn.


This was a super easy pattern to crochet-quick too!
